What’s for dinner?

I am one of the many people who watched Jamie Oliver’s Food Revolution on ABC and decided to try some of the recipes. I personally love to cook and am always trying new recipes.  I feel as though when I am cooking for my family, I am showing them how much I love them.  My youngest says it best.  He says “Mommy made this with love.”   That makes me feel good! One of the recipes that Jamie kept talking about on the show was the Chili Beef Nachos.  I decided that we needed to try it so I looked up the recipe and found it in the Jamie Oliver Forums.  I made them last night and we LOVED it!  As you can see, the recipe for the 7 Veg Sauce says it makes enough for another meal so I used it to make spaghetti tonight which was also a huge hit!  I am sold! Here are the recipes you need to get started on healthier meals for your family:

Chilli Nachos with Hidden Veg

Try this healthy version of this kids’ favourite. There are loads of lovely vegetables hidden in the tomato sauce but they’ll never know it. I like to blitz up the kidney beans so too, but if your kids don’t mind them feel free to leave them whole. Frozen corn is a great way to get some more veggies into them and will cook straight from frozen in the sauce. Make the sauce first so it’s ready and waiting when you start preparing the nachos.

Serves 6-8

For the chilli
1 tbsp of olive oil
1lb ground beef
1 onion, peeled and diced
2 cups red kidney beans, drained, reserving a little of the canning liquid
½ teaspoon chilli powder
½ teaspoon ground cinnamon
½ teaspoon ground cumin
1 quart of hidden veggie tomato sauce (see recipe below)
1 x 12oz bag Green Giant®, Frozen Valley Fresh Steamers, Niblets® Corn
Sea salt and freshly ground black pepper

To serve
1 bag corn tortilla chips
1 romaine lettuce, shredded
4 tomatoes, chopped
2/3 cup sour cream
1 cup sharp Cheddar, shredded

To cook the Chili
Put a large skillet casserole pan on a medium heat, add a little olive oil and the onions and cook for 10 minutes until soft and sweet.
Turn up the heat, add the beef and brown until lightly golden in colour, breaking it up with the spoon as it cooks.
Meanwhile use a stick blender to blitz up the kidney beans with a little of the liquid from the can until you have a thick paste (or leave them whole if you prefer).
Once the beef is browned pour off any liquid from the pan and stir in the spices.
Cook for a couple of minutes then add the hidden veg tomato sauce and the blitzed beans. Season with a pinch of salt and pepper.
Bring to a simmer and cook for 30 to 40 minutes until thickened and rich.
Once your chilli is looking good, taste and adjust the seasoning if necessary.
Throw in the Green Giant Niblets Corn and cook for a further 10 minutes.
To serve, put a good handful of tortillas on each plate, spoon over ½ a cup of chilli then top with some shredded lettuce, chopped tomatoes, a dollop of sour cream and a little grated cheese. Lovely!

Hidden veg tomato sauce

This is a really useful base sauce, which is packed with vegetables. This recipe makes a 2 quart batch but don’t worry if you’ve got leftovers because any extra sauce can be frozen to use at a later date. It’s great in a stew, on pizza, or tossed with pasta.

Makes 2 quarts
2 tablespoons olive oil
2 small onions, peeled and chopped
2 red peppers, chopped
2 zucchini, grated
2 carrots, grated
½ a butternut squash, peeled and grated
a pinch of dried oregano
2 bay leaves
2 x size 2 cans (5 cups) plum tomatoes

To prepare the sauce
Heat enough oil to cover the bottom of a large saucepan and fry the onion, pepper, courgette, carrot and butternut squash for 5 to 10 minutes.
Add the oregano, bay leaves and tomatoes, then season with salt and pepper.
Simmer for around 30 minutes.
Allow to cool slightly before blitzing until smooth with a hand blender.
Adjust the seasoning to taste.


Lessons in Laundry

I think it is important for children to learn how to do things around the house so I have shown my kids how to wash clothes, clean, cook, cut coupons, make a menu, and do whatever needs to be done to make a home run smoothly.

Recently, my husband put my clothes line back up after it had been down for a few years and I LOVE to hang clothes out. It is very relaxing to me. I have had my kids help me do this in the past few weeks and I got such a happy feeling when I looked out Thursday to see my 15 year old daughter with her clothes basket full of clothes, that she had washed by herself, and was hanging them on the line. This may sound so silly. She thought so too when I told her that I had been watching her and was so proud of her. I explained to her that it made me realize that I am teaching so much more than academics. I am teaching them how to be independent, successful adults. When my children move out and are managing their own homes, they will know how to do things. I asked her if she understands that many teens leave home to go to college or get married and they don’t even know how to run the washing mashine! Sad. They have depended on their parents to do everything for them. My children will have an advantage because they have been taught these important life skills for years.

You do not learn everything from textbooks. Laundry lessons are important too.


Key Words

I am a member of edHelper.com and I just discovered a new way to work on my kids’ vocabulary and spelling. They have a feature where you can make a word wall using words that are preset or you can enter your own words. I have made them in the past, but not like I did this time! I used the words from the current book we are reading, The Sea of Monsters which is the second book in the Percy Jackson series. I made the font color blue and set it to “highlight” the vowels in red. Why? Because I use magnet letters that are color coded this way and it has really helped my visual learning child to SEE the spelling of the word. Anyway, when I printed out the word wall words, it matched the way our magnets look.
I hung the words on the door that leads out of our family room so now everytime one of us leaves that room, we say a word, what it means and use it in a sentence. The words are the keys to pass through the doorway. This has been a fun way to learn these words! .

I came across this blog this week while meeting people in the chat room of the Ultimate Homeschool Expo. This is Megan’s Homestead & Homeschooling Blog and the very first post I read was about a Three Sister Garden. It grabbed my attention because I really have a desire to have a wonderful, productive garden but I just don’t know how. Mother’s Day 2010 Craft

Here is the cute craft that my little preschoolers made for their moms today for Mother’s Day.

We took a whisk, put Hershey kisses into it, put it into a clear cellophane bag with a note that said “I whisk you a Mother’s Day full of kisses” and tied a ribbon on it.  CUTE!

This idea came from Danielle’s Place.  I had to change it because I couldn’t find the Hugs candy.


Graduation Time

 It is graduation time and I am receiving invitations and announcements almost daily, which causes me to think back to when I was preparing for my own graduation.  I LOVED high school!  The pep rallies, sporting events, club activities, band trips, March on McLean (a carnival/BBQ fest we did), fundraisers and oh yeah, the academics too.  Actually, I really did enjoy my classes in school. We had some great teachers who really cared about the students.  They had a love of teaching and gave us a love of learning. I still often have dreams that I am 17 again and walking the halls of good old Memphis Catholic High School.

Graduation is such a bittersweet time.  You are exiting a place that you thought you’d never get out of and entering a whole new world.  You make promises of “keeping in touch” with all of your friends and then before you realize it,  4 years pass without a word.  Now, with social networking sites on the Internet, it is easier to keep in touch, but it just isn’t the same. I have reconnected with many of my high school friends on Facebook, which I am happy about, but some of these people were my BEST FRIENDS in school and now, I really don’t even know them.  We have just grown apart.  This is not a bad thing, just different.

 I often look through my “Senior Memorabilia” book and see what I wrote about what I would be doing in the future.  I am pretty much doing all of it…I just didn’t have the 8 kids that I wrote about in that book!  LOL  I am living the life that I really wanted.  My wish for all of you who are graduating this year is that you stretch yourselves and reach for your dreams.  The time goes by so quickly and before you know it, you are 35 and are like me and thinking about how much you miss your high school days. Cherish these days young people…


Unsung Heroes

                                                                                                     

On May 1st, storms rolled through West Tennessee and some areas experienced major flooding.  Many people lost their homes, cars…well everything they owned. Most of these people did not have flood insurance. During this crisis, many people jumped in to help.  The Red Cross came, Convoy of Hope came, and locally Memhis Loves Kids set up a collection program, the Millington Crisis Center and local churches became refuge and distribution centers…it has been amazing to see the wonderful way that his has brought people together.  By the way, you can click on any of the links to donate to the charities that are helping!

While all of these organizations are working hard to help people and I am very proud to know people running and working with these groups, there are also individuals out there that have taken it upon themselves to help specific people.  These are the unsung heroes…true servants in my opinion.   People who are serving others in their time of need and not expecting any type of recognition or pat on the back. They are not saying “Look at me and what I have done to help”.  They are just doing it.  Two of them are my mom, Vicki Echols and my aunt, Tina Walker.  Oh, I am sure there are others but I want to just tell you why I think that these two are amazing.

My mom has a friend whose two daughters, ages 7 and 14, lived with his ex-wife in the Shady Oaks mobile home park.  This place was completely destroyed by the flood and over 200 residents of the community now have no place to call home. When my mom found out that these girls lost everything, she didn’t hesitate to help collect money and things for them…although, she has personally never met these girls.  Oh and I should also mention that she is having her own issues with her health right now and has been visiting doctors and having tests run through all of this.  That has not stopped her from doing what needs to be done to help someone who needs it. If you would like to help these girls, let me know and I will get you in touch with my mom.

Now on to Tina.  She showed up at the Baker Community Center to help the Red Cross Disaster Relief Team and sorted clothes, talked to people and did whatever needed to be done.  Eventually, the Red Cross had to move to one of the larger churches in Millington because they needed more room and Tina moved with them.  She served food to strangers, comforted people and again, did whatever they needed to do to help.  Well, when she was leaving the church on Monday, she met a man in the parking lot who asked if she would take him to pay his cell phone bill…she said yes and took him to the bank and to pay his bill.  He also mentioned that he desperately needed some clothes, all of his were somewhere covered in muddy water.  You may be thinking, “why didn’t he just go ask at the church where they are giving out clothes?”  Well, you see, this man needed a size larger than most and the church simply didn’t have many of the larger sizes. It just so happens that my aunt had some clothes at her house that would fit him!  That is such a GOD thing!  He asked Tina if she would be able to run him to the Big and Tall store but she wasn’t able to that day but told him she would come back the next day and take him shopping.  She dropped him back off at the shelter (church), went home & grabbed some of the clothes and took them back to him. Did she go back the next day?  Of course! She took him shopping and was blessed by his company.  Oh, and by the way, in between times, she was going to her storage building in Munford and removing items that had been under at least 5 ft of water because of the flood.  Items that can not be replaced.  Things such as the American Flag that the Army presented to my Mamaw at my grandfather’s funeral in 1976.  While she was dealing with her own loss, she still was serving others.  That my friends, is what it’s all about. Being a true servant is doing for others without reward or recognition. It is carrying the burden of someone else so their load is lessened.  It is giving completely and without regard to your own needs.  So, who do YOU know who has been serving tirelessly and are not bragging about what they have done but are just doing it?
